Happy New Year! I hope everyone's 2012 is off to a great start!
The BF and I spent NYE in Chattanooga visiting friends. We played golf during the day and went to an 80's party that night! It was an absolute blast!
The New Year is always a great time to start a new workout routine or better eating habits. This year Julia and I are running the Nashville Half Marathon so its time to get myself into running shape! And after a fun holiday season of eating way too many sweets, I think it's time for a salad. Here's an easy Asian salad I made for my Dad's birthday party:
Wonton Cups filled with Asian Salad
What you need:
2 bags of pre-shredded cabbage
1 bag of shredded carrots
1 red onion
1 green pepper
1 red pepper
1 cup of peanuts
2 bags of edmame (found in the freezer aisle)
1 bottle of Krafts light Asian dressing
Slice everything into even slices. Mix in a large bowl and add enough dressing to coat (I used almost the entire bottle). This serving size is pretty large, enough to serve about 40 ppl - so you might need to cut it in half.

To make the wonton bowls, just place a wonton wrapper in a mini muffin tin and bake for 8 mins. at 350 degrees. When the edges are golden brown take out of the oven. Cool the cups, then serve with Asian salad.
