Tailgate Tuesday: Diet Coke Brownies

Welcome back to Tailgate Tuesday here at Southern Color!


It's nice to have any easy go-to recipe for those times you are invited to a last minute tailgate.   I'm sure y'all have seen this Pin floating around on Pinterest, Diet Coke Brownies.  Two ingredients that most people have in their pantries.

I mean, if the can of pumpkin trick works, why not diet coke.


I used Trader Joe's Reduced Guilt Brownie mix and 1 cup of diet coke.  The recipes I read online called for 1.5 cups - so just add the coke until your mix is completely wet and normal brownie batter consistency.


I greased my pan and coated it in a light layer of powder sugar.



Bake in a 350 degree oven for about 25 mins. 
Depending on how hot your oven gets it might require less time, so just start checking 5 mins. prior.




Serve on a cute platter and sprinkle with powder sugar.



The brownies turned out super moist. 
You can't taste the diet coke at all, just chocolatey goodness!

I figure these brownies are low in calorie since they're made with diet coke... so they're good for you, right?!?!
Serve on a cute Magnolia Lane plate and you're ready to tailgate!

  1. Looks absolutely delicious!!! I never thought to coat the pan with powdered sugar (only flour), will definitely give that a try. Does it keep it from sticking too?

    1. I used powdered sugar because I didn't have flour and I knew the brownies would be gooey and sticky. It actually worked really well and kept them from sticking. Let me know if you try it :)
