Low Country Boil (aka Frogmore Stew)

For our brother's rehearsal dinner we made one of my favorite meals...Low Country Boil.  Some of you might know it as Frogmore Stew.  It's a great one pot meal that is absolutely delicious!!!
Low Country Boil






Ingredients:
3 lbs smoked or polish sausage - cut in one inch pieces
2 lemons - sliced
2 large onions - coarsely chopped
2T crab boil or seafood seasoning mix
salt and pepper to taste
1 stick of butter
12 ears of corn, shucked and broken into 2 or 3 pieces
3 lbs of new potatoes - cut large ones in half
3-5 lbs raw shrimp in the shell - allow 1/2 lb per person

Directions:
Fill pot 1/2 full of water
Add sausage, lemons, onions, crab boil, salt and pepper
Bring to boil and cook for 10 minutes
Add butter
When melted, add potatoes
Cook another 10 minutes
Add corn and reduce heat to slow boil
Cook 5-7 minutes
Add shrimp
Cook at a slow boil until shrimp are pink

Drain and serve!



This is a perfect meal for big groups during the summer!  Hope you enjoy!!
