Cheesy Goodness!

Here is one of my favorite recipes for family gatherings!

Creamy Macaroni and Cheese

2 cups uncooked elbow macaroni
1/2 cup butter
1/2 cup all purpose flour
1-1/2 cups milk
1 cup (8 oz.) sour cream
8 oz. Velveeta cubed
1/4 cup grated parmesan
1/2 t salt
1/2 t ground mustard
1/2t  pepper
2 cups (8 oz.) shredded cheddar cheese

Cook macaroni according to package directions. Meanwhile, in a large saucepan, melt butter. Stir in flour until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes.

Reduce heat; stir in the sour cream, Velveeta, Parmesan cheese, cheddar cheese, salt, mustard and pepper until cheese is melted and smooth.

Drain the macaroni; Toss with cheese mixture. Transfer to a greased 3 qt. baking dish. Bake uncovered at 350 degrees for 35-40 minutes or until golden brown and bubbly.

Yields 6 servings

I always double this recipe because you can never have enough mac n' cheese!
